Botanical Name: Smallanthus sonchifolius
Country of Origin: Peru
Qualities: Yacon, also known as polimina, Mexican potato, or potato bean, is a tuberous root native to South America and similar in appearance to a sweet potato. The high fructooligosaccharides content contributes to the anti-hyperglycemic effect of yacon on the body and contains good levels of potassium, calcium, and phosphorus.
Common Use: The taste of yacon root powder, has been described as being similar to a cross between celery and Granny Smith apples. Yacon can be consumed fresh, powdered or in syrup form and is believed to once been a staple of the Incan diet. It is now appreciated as a nutrient-rich, low glycemic, alternative sweetener, adding a mild sweet taste to baked goods, coffee, or smoothies.
Storage: Store in a cool, dark, dry place in airtight container. Refrigeration not required.
