Production: Canola oil is a vegetable oil derived from rapeseed, which is a bright yellow-flowering member of the mustard and cabbage family. Expeller pressed canola oil is oil that is physically squeezed out of the canola plant rather than being extracted with a solvent. This process is much more time consuming than the alternatives and produces a product with a lower smoke point since it has not been heated to high temperatures in the processing.
Qualities: Cold pressed canola oil has a distinct buttery flavor and is a mild and versatile addition to any kitchen.
Common Use: This oil can be used for all types of cooking or it can be used raw in salad dressings or dips!
Storage: Store in a dark, dry, cool place in a sealed container.

Expellor pressed makes a difference
This is a light oil, with very little taste, so you don't use it to flavor food, but to be "oily" where you don't want an oil flavor. We use it most to pop popcorn. I notice that cleaning up this oil from the popcorn pot is different than using the cheap canola in the big grocery store. This stuff wipes off the pot just using a microfiber scrubby -- no soap is really needed -- whereas the cheap alternative won't clean off the pot without a good amount of soap. I'm not sure what this means health-wise, but it's a noticeable difference. The price on the gallon size is very reasonable for this product.
