I had a recipe for Socca that I wanted to make but needed chickpea flour. I was happy to find it at Essential Organics. Socca is a flat bread that adds variety and nutrition to gluten free diets. Here is a simple recipe.How to Make Socca1 cup chickpea flour1 cup water1 1/2 tablespoons olive oil1/2 teaspoon salt1 teaspoon za'atar (save to use after baking)Need a 10 in cast iron skilletWhisk together all the ingredients. Let rest for 30 minutesPreheat oven to 450 degrees. Arrange oven rack 6 inches below broiler element. Five minutes before batter is done resting place skillet in oven and turn to broil.Remove hot skillet from oven. Add 1 teaspoon of oil to pan to coat bottom of pan. Pour batter into center of pan and tilt to spread it out.Return pan to oven, broil for 5-8 minutes until to begins to blister and brown. Edges will be crispy.Use flat spatula to remove socca to cutting board. Cut into wedges. Sprinkle with olive oil, salt, pepper, and za'atar. Also good when dipped in balsamic vinegar and oil.Enjoy!
