The most common edible species of walnuts are either the English walnut (J. regia) originated in Persia, and the black walnut (J. nigra) which is native to eastern North America. The black walnut is of high flavor, but due to its hard shell and poor hulling characteristics it is not grown commercially for nut production.
Qualities: unlike other nuts high in monounsaturated fatty acids, walnuts are composed largely of polyunsaturated fatty acids (72% of total fats), particularly alpha-linolenic acid (14%) and linoleic acid (58%), as well as oleic acid as 13% of total fats. Walnuts without shells are 4% water, 15% protein, 65% fat, and 14% carbohydrates, including 7% dietary fiber.
Common use: Walnut meats are available in either their shells or shelled. Our walnuts are shelled and raw. Walnuts are enjoyed in many culinary dishes, both savory and sweet, as well as baked goods and are delicious candied or pickled.
Storage: ideal temperatures for long term storage are −3 to 0 °C (27 to 32 °F) and low humidity

Raw, Organic Walnut halves
These are excellent. Storing the box in the freezer keeps them from becoming rancid, as walnuts easily do. I remove about eight cups, then brine them overnight in 2Tbs salt per 4 cups raw nuts. Then drain the saline completely. We have a wonderful dehydrator into which I layer the nuts on metal trays (like chicken wire but squares), and adjust the temperature no higher than 120 degrees Fahrenheit for 24 hours. When I turn off the heat, I remove the dehydrator door and allow the nuts to cool, after which I scoop them into glass jars and store in the fridge. OH YUM! THANK YOU Essential Organics and the caring person who helped me place the order! (I don’t know if this will be made public…. hope not…. So keeping her name private.) Of course we eat them by the handful… with goji berries and pumpkin seeds and raisins… and chop them into our homemade chocolate… and… GF muffins… etc! THESE WALNUTS ARE THE BEST.

Tainted with odor
I have contacted the company directly about the odd odor in the walnuts I received, which ruined the flavor. (Same issue happened with the oats in my order but flavor was not affected. I assume that because oats are not fatty like nuts they don't absorb the odor.) The company rep responded kindly and promptly with an offer of some percentage off my next purchase, but since I had to discard these walnuts, this was an inadequate response. They did say they were working on the problem.

Very good value
Would give 4.5 star if possible. The 5 lb bag didn't last long as the walnuts were almost as excellent as the organic ones from our local co-op. Good value.
