Botanical Name: Prosopis pallida
Production: Prosopis pallida is a spreading bush that bears spines, yellow flowers, and long pods filled with brown seeds. It is highly resilient and has the ability to survive harsh desert climates and to live for over a millennium.
Qualities: Mesquite, also known as kiawe, or American carob, is known for its nutritional density and sweet earthy taste similar to cacao and carob. Mesquite is high in protein, low on the glycemic index, high in dietary fiber content, natural sugars, magnesium, iron, zinc, and potassium.
Common Use: Mesquite powder can provide a unique, molasses-like flavor to a wide variety of culinary preparations like oatmeal, chocolates, smoothies, baked goods, and barbeques.
Storage: Store in a cool, dry, dark place in an airtight container. Refrigeration not required.

Organic Mesquite Powder
I love to sprinkle it on vanilla ice cream, I substitute it for 1/2 of flour in baking recipes, and it’s phenomenal for chai or any type of tea. It really adds a brownie taste to foods even if they have no chocolate at all. It’s also fantastic in oatmeal. Such a lovely flavor, and quite potent so you don’t have to use very much. I really enjoy this product and am slowly introducing it to my friends that bake at my local farmers market. For traditional baking, diabetic baking, and also keto baking.
