Botanical Name: Ceratonia siliqua
Origin: Portugal / USA
Production: Carob is a flowering evergreen shrub in the pea family. In autumn, the plant blooms small, spirally arranged flowers that are pollinated by wind and insects. The fruit produced is a long legume (pod) that takes a year to develop and ripen. The pod is dried and roasted.
Qualities: Carob is often used as a chocolate-like substitute for cocoa. Perhaps the primary reason for this is that unlike cocoa, carob does not contain theobromine or caffeine, which are both stimulants. Carob is rich in calcium and fibre.
Common Use: Carob is most commonly used in baking recipes and as a replacement for chocolate. The raw carob powder is considered to have a bitter flavour, which is toned down by roasting.
Storage: Store in a cool, dry, dark place in a sealed container.

Carob powder - excellent!
Love the carob powder! I mix cacao nibs, coconut shreds, carob powder, maca powder, maybe a little ashwaganda powder, hemp seeds, tahini, peanut butter, or applesauce, tigernut flour, a little cassava flour, small amount of coconut sugar, tsp. of inulin powder, Laird's superfood turmeric or pumpkin creamer, sea salt to taste, and roll up into balls. Then dip the balls into a mixture of coconut shreds an Laird's superfood creamer either in pumpkin or turmeric, and maybe a tad of coconut sugar and sea salt to taste. Yummy and healthy!!!

I mix the carob powder with whey protein from very contented cows. A great drink.I can trust the carob!
Carob ice cream
This is by far the best carob i have found! It made absolutely amazing ice cream. I did need to mill it briefly to make it a bit finer. But it was the work of a moment, and I couldn't be more delighted! Thanks so much for another terrific product.
