Botanical Name: Piper nigrum
Production: Piper nigrum is a flowering vine that produces berries that hang off of the plant in drupes, they start out green and eventually ripen to red. Green peppercorns are picked unripe and freeze dried to preserve the color and flavor.
Qualities: Green peppercorns, in addition to being a culinary treat, are considered high in iron, vitamin K, and antioxidants, and may have health benefits such as aiding in digestion and potential anticancer properties.
Common Use: Green peppercorns are pungent, fresh and slightly less spicy than black peppercorns. They are popular in French, Thai, and Western European cuisines.
Storage: Store in a sealed container in a cool, dark, dry place.
