Botanical Name: Piper nigrum
Origin: India / Sri Lanka
Production: White peppercorns are from the same plant as black and green peppercorns, but they are hulled so that just the inner fruit remains. In order to expose the fruit, they are soaked in a brine and the skin is rubbed off.
Qualities: White pepper has a milder, more delicate and slightly musky flavor compared to black pepper.
Common Use: The hulled peppercorn is useful for adding a peppery note to light-colored sauces and dishes without adding black color. White pepper is popular in Chinese, Thai, and European cuisines.
Storage: Store in a cool, dry, dark place in a sealed container.
